Ingredients
2 med/large sweet potatoes
3 tablespoon margarine
1 1/2 tablespoon brown sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 cup of orange juice
salt and pepper to taste
Directions
- Bake the sweet potatoes until soft. Let cool. Remove skins. Place in mixer and beat together all remaining ingredients.
- Place yam mixture in casserole dish. Bake at 350 until heated through, approximately 20 minutes.
Serves: 4.
