Apple Pie

Recipe Courtesy: Paul M. of Pittson, Pennsylvania.  Paul tells us this is his mom's recipe.

Ingredients:

2 cups flour
1/2 teaspoon kosher salt
3/4 level cup all vegetable shortening, chilled
5 tablespoons very cold water
8 cups tart apples; peeled, quartered, cored, and thinly sliced
3/4 to 1 cup sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 tablespoons vegan margarine + 1 tablespoon melted vegan margarine
~ 1 tablespoon sugar for top of crust

Directions:

  • Preheat oven to 425º Fahrenheit.
  • Mix flour in bowl with salt. Blend shortening and flour with a pastry blender (or two knives) until mixture begins to resemble pea-size clumps. Add one tablespoon of water at a time until dough forms a ball.
  • Divide dough in half. Form two disks and flour each lightly. Roll dough into a circle about an inch wider than the pie pan. Place one crust in pie pan, pressing down.
  • Peel apples, core and slice apple thinly. Mix with sugar, cinnamon, nutmeg and salt. Pour mix into crust. Cut vegan margarine into thin pieces and dot over apple mix. Cover with top crust and crimp edges together. Make several "x" marks through top crust to vent steam while pie is cooking. Melt vegan margarine and brush over top crust, then sprinkle with sugar.
  • Bake 40 minutes. Cover with tinfoil to prevent crust from over-browning and bake additional 10 minutes.
  • Serve warm with vegan vanilla ice cream, or at room temperature.
