Hi Rueth,
I understand about not being able to get the ingredients. When we visit family, that is often the case, and we wind up surviving on hummus, oatmeal, and salad (ok, that's an exaggeration, but sometimes that's what it feels like).

As for these recipes, often you can sub out normal ingredients for the hard to find stuff...
If you're interested in the plantain crepes, you can try regular flour in place of the spelt, and canola oil in place of the coconut oil. Shoyu is a type of soy sauce, so you could use that... These will result in a slightly different taste, but really not all that significant.

The coconut soup calls for pretty basic ingredients. Can you get coconut milk in your grocery store? It would be in the "asian" or ethnic foods section - where you'd find the soy sauce. Red curry paste would be in the same area... There are substitution recipes on line.

The coconut rice looks pretty basic too. I don't know how your spice sections look, but if you can't get Turmeric at the grocery store, you can order it online... Penzey's Spices has everything you could want and more.

Do you have a "health food store" nearby? If so, they'd likely have the ingredients you're looking for. Nutritional yeast can be found in stores like Whole Foods and The Vitamin Shoppe.

What ingredients are you having trouble finding? Perhaps we can offer a few suggestions...

Those recipes all look so tempting..but I just wish someone would compile a top list for vegans such as myself, who live in the midddle of nowhere and can't get any "special" ingredients....
Any suggestiong would be great ;-)

Hi Christina -- Thanks for the recipe on the lentil burger. I'm guessing Jane will try that soon. We've been talking about making our own burgers. She's really trying to control our intake of processed foods. We've got a slew of red lentils in the house, so she'll probably use those instead.

Rockaroo --Angie, you have to let us know how they turned out for you. As I mentioned in the post, we have so many new recipes to try, I don't think Jane is planning on that any time soon. I know she looooves root beer, so if it's stellar, she might bump it up the list.

Hi AnimalLover - yes, that's likely to be the one we try first. We seem to be on a chickpea roll lately.

Hi Kara - We've never been. But I know we'll be going to Portland in the next 12 months. So, we'll try it then. I'll also look for that cookbook, thanks for the tips.

Re: Vegan Fusion - We ate at Blossoming Lotus while we were in Kauai. The food was divine... They even put out a small dish of spiced pumpkin seeds. So we could nibble while waiting for our Bowls. I have their original cookbook. Highly recommended!
I hear they have a restaurant in Portland, OR.
