Yes, it’s that time of the year again… St. Patrick’s Day is just a week away. (If you couldn’t tell, just look at the beer displays in your local supermarket.) A few days later it’ll be spring. I know it’s snowing back east; it’s over 80 here… just saying…
Given the warmth here, smoothie season is most definitely upon us! I give my wife ample warning about taking over a portion of our freezer for smoothie related stuff: berries, kale, spinach, etc. Granted, I usually use fresh ingredients, but since I start each day with a shake, it’s nice to have reserves on hand in case the fresh supplies are exhausted.
This smoothie is a minted (literally), spinachy twist on the shamrock smoothie bowl I shared a couple years back.
In this more vibrantly green version, baby spinach stands in for kale and the addition of fresh mint/mint extract adds a cooling, refreshing vibe.
