Summer Pasta with Mushroom Scallops, Burst Cherry Tomatoes & Zucchini

Tomato season is finally here, and I’m cheering for its arrival. My mother always likes to remind me that tomatoes were my favorite food as a kid; I couldn’t get enough of them then, and apparently I still can’t. I eat tomatoes almost ceremoniously when they first show up at the farmer’s market, sliced and with nothing but a sprinkle of flaky salt.
