In my bachelor days, I frequently had breakfast for dinner; specifically a bowl of Cheerios and milk. Often that was because I would come home late and was too tired to think about preparing a meal. But there is something comforting about having breakfast for dinner.
Since we've been vegan, breakfast isn't what it used to be. Cereal and soy-milk isn't the same as cereal and cow's milk... but we don't drink cow's milk anymore. I typically have a smoothie with protein powder for breakfast and Jane will forage... I've tried to make waffles, but so far I haven't found a recipe that works for us.
And then there's the tofu scramble. It's not eggs, but that's OK. It's really good. We usually have a few slices of Fakin Bacon, a bagel with a schmear (vegan cream cheese of course), tomato or avocado slices, and a green salad. What more could you want? Tasty, nutritious, and comfort food! It's not just for breakfast at our house.

That's a Wrap!Tonight we had Yves Lettuce Wraps for dinner. This was the second time we've had this product, and both times we've really enjoyed it. It's been over six months since I've had chicken, but this product tastes exactly as I remember the non-vegan...
Yet Another Meat RecallIt feels like there is something in the papers, almost weekly, to give me another reason to thank Jane for suggesting we change over to a vegan diet. On Saturday, May 3rd, Gourmet Boutique, LLC, announced a voluntary recall of 286,320 pounds of...
Last Vegan Food For 500 MilesJane and I are off to Montana for a week. Since it looks like vegan dining will be Taco Bell and The Pita Pit, we figured we'd get a quick fix from our favorite vegan restaurant, Shojin. As always, dinner was fantastic. We started our dinner...

You should ditch the waffles and make pancakes!! There’s a good recipe in Vegan with a Vengeance; we make them on the weekend at least once . . .
I’ve yet to try a tofu scramble, but I think you might have convinced me to try it!
Pancakes are appealing. I haven’t tried the Vegan with a Vengeance cookbook yet, just put the request in for ILL (inter-library loan).
Let me know when you try the tofu scramble and how you like it. It really works for me!

Well, I don’t just eat Cheerios anymore since I’m on the WW diet .. I also eat Lucky Charms, and other stuff too
But, I’m almost always eating salad every night with some twist in it .
Hope You are losing weight with your vegan diet! Take care.
Hi Hart,
I laughed about the Lucky Charms. I was just craving Cap’n Crunch yesterday.
Glad you’re having success on the WW diet regime. I understand it’s supposed to be one of the better plans with regard to weight loss retention.
Actually, we’re not “on a diet” per se. We have changed our way of eating and have been losing weight as a byproduct. It’s been very easy for us and we’re not feeling particularly deprived. We set out on the vegan path because of potential health problems (Jane has really bad genes), and we’ve read a number of things that have us convinced this is the way to go.
Every once in awhile we’ll crave something we used to eat, but for the most part, it’s been a relatively easy conversion, with a really great side-effect: slow, steady weight-loss. Of course, if you’re going to eat nothing but highly-processed vegan “junk” food, then you could probably gain weight. But we’re eating lots of grains and veggies, things that are much less calorie-dense than the meats and cheeses we used to consume.
Anyway, best of luck with your quest.
