One of the hardest things about being vegan is a lack of convenience foods. Jane doesn’t always feel like cooking, and even though we live in Los Angeles, a place known for its culinary diversity, restaurants can be problematic. Don’t get me wrong, I’m not complaining, I know we have it better than a lot of other vegans. But sometimes you don’t feel like getting back in the car. And try getting a vegan meal at a “regular” restaurant. You’re always taking a leap of faith. How much does your server really know about the ingredients in your meal? Never mind how those ingredients are processed (is the sugar refined using bone char?).
Most of the foods we eat at home are made from scratch, which can be rather time consuming. So Jane makes a point of having a few microwavable staples in the freezer for those nights when she just doesn’t have enough time or energy to actually cook something. Tonight was one of those nights. We had Gardenburger’s Black Bean Chipotle Burgers. They were very tasty. Jane prepared them with some home made guacamole and frozen corn, and put them on toasted multi-grain bread with vegan mayonnaise. That was all accompanied by a large green salad, as always.
It was a quick and easy dinner, which was delicious. We’ll definitely have this meal again.

Gardenburger’s Black Bean Chipotle Burgers are one of my favorite convenience foods! Looking good. It sure is encouraging how many vegan items are flooding the market these days. Awesome blog you have here!

Yes, it’s great to see all the vegan pre-fabbed foods out there. And we’re really spoiled here. The Whole Foods that just opened up nearby has the most amazing food court with TONS of vegan selections.

When I lived in Santa Monica, I relied on happycow.com to find veg restaurants, and as far as convenience food, hummus and veggies, etc were a great, quick thing to pick up at pretty much any market. Oh, and olives! Yummm…
Have you been to Coopertunity in SM? I used to work there… So great! and TONS of made-in-house convenience foods.

We love Happy Cow and have it listed on our resources page. It’s helped us figure out where to go on more than one occasion.
Haven’t tried Coopertunity. Santa Monica is about 45 minutes from here, so it’s a bit out of our way for shopping. But next time we’re in the neighborhood, we’ll have to give it a try. Thanks for the tip.
